I Tried to Stuff Mushrooms with Stuff

 This recipe was not taken from a website. It’s just a combination of what I thought might be delicious. Which means, there’s no steadfast rules! You can tweak it however you feel. Get deliciously creative. 



Here’s what you might need:

Pack of large stuffable mushrooms

Tofu Mixture: half a block of Tofu, bell pepper, garlic, tomato, water and olive oil

Veggie Mixture: mushroom stems, spinach, kale, onion


Seasonings Used:

 cumin, nutritional yeast and salt for tofu mixture

complete seasoning and sesame oil for veggie mix

Tools:

Skillet, baking dish lined with parchment paper




Method:

In a pan cook to soften half a tomato, bell pepper, garlic

Add to a blender along with tofu mixture olive oil, seasonings and water until smooth

Set aside and add to the pan finely chopped veggies and seasonings. Cook until the mixture shrinks down.

In your lined baking pan, place your mushroom and and fill with tofu sauce, veggie mixture and tofu sauce again. Drizzle with olive oil and shave on your favorite vegan cheese! 

Bake at 400 degrees for 20 minutes.
