Extra Tidbits:
*Soymilk works best as the non-dairy milk for this recipe because of how it reacts to the apple cider vinegar to create the buttermilk effect.
*I was in a hurry making these and grabbed some warm water that was sitting in a tea kettle to stretch my little bit of soy milk I had left. This really got the mixture of milk and vinegar going!
I think (will have to test again to be sure) this made for muffins that had a nice fluff to them.
