Blink Twice Vegan Chik'n Salad Sandwich

Rated: A must try! Great for lunches.

How To Make It: 
So you guys, I really had a hankering for a cold, refreshing salad sandwich. This was THE answer!

All you need:

  • 1 can of chickpeas
  • 1 green pepper
  • 1 red pepper
  • 1 small onion
  • 1 lemon
  • olive oil
  • salt
  • black pepper (optional)
  • cayenne (optional)
Now, traditionally, salad sandwiches are mixed with mayo. You can opt for a few helpings of vegan mayo here but, I was all out. So here's what I did -

1. Place half a can of chickpeas in a bowl and mash roughly with a fork. 
2. Place the second half of the chickpeas in a food processor with a few tablespoons of olive oil, salt and lemon. Blitz it into a paste. (You've just made hummus!) 
3. Dice your veggies (you don't have to cut the whole pepper up or the whole onion - use your discretion for balance) and add them to the bowl with the roughly mashed chickpeas, followed by the hummus. 
4. Season to taste with your salt, black pepper and cayenne or any seasoning of your choosing. Even squeeze a bit more lemon or lime if you'd like. Be the chef! 

Spread onto to some delicious toasted bread and there you have a refreshing vegan sandwich. I look forward to taking this for lunch with some added romaine, spinach leaves and tomato.
